Operated by the Bishop family, The Panwich has been around longer than just our food truck. It all started with a dream in 1998 from Jennifer Bishop to create something delicious for her two picky boys, David and Christopher. Not only did her children love The Panwich, but so did everyone else who gave it a try.
Jen is an expert at flavour combination, using her knowledge from culinary school at George Brown to create over 150 Panwich creations. She received her red seal certification chef papers at George Brown. She is also a certified teacher who taught the Ontario Youth Apprenticeship program in baking. With her guidance, her students had a clean sweep at the Halton Skills Olympics winning, bronze, silver, and gold. Jen has also taken part in many volunteer opportunities. She starred in a volunteer cooking show broadcast by Cogeco Television, and developed an after school cooking and fire safety program in conjunction with the Burlington Fire Department. The Panwich craze escalated and in 2004 she was interviewed for a news story for the Hamilton Spectator: "Burlington woman's 'Panwich' draws raves".
Her love of food and philanthropy was inherited by her sons, and her eldest David Bishop decided to bring back his childhood favourite food in the form of a food truck for the world to enjoy.
The Panwich Company food truck is now a family operated business, with David and his girlfriend and Jen and her husband Billy working relentlessly to bring The Panwich to the people since 2015.
